Interview With Maureen Petrosky

CATHERINE CALLAWAY, CNN ANCHOR: Here is what you need. You need a grill, you need a cooler, plenty of chairs, and you got to get there about two hours before kickoff. What is all this? Tailgating, of course, which Miles O'Brien...
MILES O'BRIEN, CNN ANCHOR: Two hours?

CALLAWAY: ... has never participated in, I do not believe.

O'BRIEN: (UNINTELLIGIBLE). I have, but it's -- it's more than two hours for most of these people.

Maureen Petrosky is an expert on tailgating, (UNINTELLIGIBLE).

MAUREEN PETROSKY, CHEF: Good morning.

O'BRIEN: Yes, she's a Villanova graduate.

CALLAWAY: (UNINTELLIGIBLE).

O'BRIEN: I don't know, is there much tailgating at Villanova?

PETROSKY: I think I heard you went to Georgetown. I think we could teach you a few things about tailgating.

(CROSSTALK)

O'BRIEN: Oh, well, OK. All right. Let's get the college rivalries behind us and talk about -- First of all, you're in Athens today, where they're going to play...

PETROSKY: Yes, we are, we're up here for...

O'BRIEN: For a UGA game between the hedges, as they call it there. And what you have before you, which we just saw in the tease, looks rather elaborate. I just want you to tell me, is this the most elaborate display you've seen so far this morning, or do people really put it together up there?

PETROSKY: Well, it's pretty early, so they're not really cooking yet. I guess they're going to start firing up their grills around 1:00. But we have a spread that took us five minutes to put out, and we've been getting oohs and aahhs all morning long from the passers- by. They want to be at this tailgate.

CALLAWAY: All right, tell us what you got there. We see the bloody Marys, got to have a bloody Mary, I guess.

O'BRIEN: Well, we've been talking about that for a long time. I mean, give us -- what's your bloody Mary recipe? What's your theory on this?

PETROSKY: Well, the theory is, there's two ingredients. And one is a bloody Mary mix, and one is vodka. Now, we chose to be responsible...

O'BRIEN: Well, wait a minute. You buy the mix? You don't make your own?

PETROSKY: It's bright and early.

CALLAWAY: No, she said it takes five minutes.

PETROSKY: If you knew Whiskey Willy, you would buy the mix too.

O'BRIEN: Really, Whiskey Willy.

PETROSKY: This is fabulous. Whiskey Willy.

O'BRIEN: All right. My father has a recipe that involves Clamato juice and a bullshot. You heard of this stuff, bullshot? And then -- and he's got horseradish in there, and it's quite good. I think Whiskey Willy's...

PETROSKY: Horseradish?

O'BRIEN: Yes.

PETROSKY: Do you think you'd give Whiskey Willy a run for his money?

O'BRIEN: Absolutely, yes.

CALLAWAY: All right, let's move on. You not only have got...

O'BRIEN: (UNINTELLIGIBLE).

CALLAWAY: ... did we (UNINTELLIGIBLE)? You don't know, we have bloody Marys, but did I see quiche?

PETROSKY: Did you see quiche?

CALLAWAY: Yes, I couldn't tell what that was.

PETROSKY: No, we have cheese.

CALLAWAY: Is it cheese? All right, go ahead.

PETROSKY: We have cheese over here...

O'BRIEN: Football fans don't eat quiche.

(CROSSTALK) CALLAWAY: Well, that's what I was going to say.

O'BRIEN: University of Georgia? They pronounce it kitschy. Right?

CALLAWAY: Oh, Miles, you know?

PETROSKY: We did a really easy antipasto spread. We bought cheese, we bought salamis. People want to really avoid, if they they're not -- if they don't know how to store food properly, avoid getting into bringing out raw meats. Then that keeps you by the grill all day, and especially this Labor Day, you should be taking off and enjoying the tailgate with all of your friends

So this allows you to just put the platters out, and you don't have to worry about it.

CALLAWAY: Yes, but many will be firing up the grills today, won't they?

PETROSKY: They sure will. Well, everyone knows how to do a burger or chicken, so we decided to show them some easy sides to bring. Often people bring potato salad or macaroni salad, and it sits out all day and nobody wants to eat it anyway.

So we went ahead and brought some items that can sit out for awhile. Again, your cheeses, your dairy products. You can throw them back into your cooler, they're small, they're easy to handle. But we have a lot of breadsticks and crackers and focaccia, all things you can buy, potato chips.

And again, for the meat lovers, the salamis, pepperonis, hard meats. And then, of course, you know, for the vegetarians and the breakfast goers, we've got some fruit here and some really great grape tomatoes.

O'BRIEN: Well, let's get back to the bloody Mary, shall we?

PETROSKY: OK.

O'BRIEN: (UNINTELLIGIBLE), Whiskey Willy's, tell me about that. Can we find that around the place? Is that all over the place?

PETROSKY: It is. I think they're going to put up a Web site for you, it's www.whiskeywillie.com. And that's in -- you can get on the Web site and check it out, where it's available near you, and they do do mail order also.

We also did, right next to our Whiskey Willy, for nonalcoholics, we combined it with a beer. You can make a bloody Mary, a great bloody Mary for nonalcoholics, throw a little extra horseradish in there and a nonalcoholic beer for those of you who want to drink slowly or in moderation throughout the day. You can start off with one of those and move on to perhaps the more upscale with the Belvedere.

CALLAWAY: Yes, Miles is already on the Web site, he's busily working here trying to find it.

O'BRIEN: Is it Willy with a Y, or I-E?

PETROSKY: It's Willy with a Y.

O'BRIEN: OK, I'll try to get it up before we...

PETROSKY: It's E-Y.

O'BRIEN: Yes, all right, E-Y, oh, my goodness gracious.

PETROSKY: E-Y, W-H...

O'BRIEN: All right, all right.

CALLAWAY: Yes, and you made cracks about the quiche, the University of Georgia, Miles, I wouldn't...

O'BRIEN: I know, I'm going to be in...

CALLAWAY: ... be heading up there, you are in big trouble.

O'BRIEN: I'm going to get some...

CALLAWAY: I would not be heading up there for any tailgating.

O'BRIEN: (UNINTELLIGIBLE).

PETROSKY: No quiche.

O'BRIEN: I found it, there it is. Whiskey Willy's.

All right, well, let me ask you this...

PETROSKY: There you go.

O'BRIEN: ... how did you -- how did you become so interested in tailgating?

PETROSKY: Well, my background is a chef, and I'm also a certified sommelier. And those things just go perfectly, food and beverage for a festive occasion like this.

CALLAWAY: All right, Maureen Petrosky, thank you so much for being with us. Have a good time. You going to stay up there and watch the game?

PETROSKY: We will, we'll be here until...

CALLAWAY: Or are you just going to party in the parking lot?

PETROSKY: You can come back and visit us around noon. We will show you how things are progressing here.

O'BRIEN: All right, things will be heating up then. There it is, Whiskey Willy's is out of Orange Beach, Alabama, by the way. Go to the Web site, you'll get all the information there. And...

CALLAWAY: And Miles, you better not be heading up there.

O'BRIEN: I'm not going anywhere near there.

CALLAWAY: (UNINTELLIGIBLE) bottles being thrown not at you after your little (UNINTELLIGIBLE).

O'BRIEN: You know, the problem is, my father-in-law went to Georgia Tech, and so all of that has rubbed off on me.

CALLAWAY: Yeah, well...

O'BRIEN: There is little rivalry with this Georgia Tech (UNINTELLIGIBLE)...

CALLAWAY: It was a low blow, if you ask this Georgia native here.

O'BRIEN: Yes, well, you're wearing your Georgia colors.

CALLAWAY: That's right.

O'BRIEN: All right...

(CROSSTALK)

JACQUI JERAS, CNN METEOROLOGIST: (UNINTELLIGIBLE) you ever been to a tailgating, you guys?

O'BRIEN: Yes, I have been.

CALLAWAY: All right.

O'BRIEN: I used to -- I grew up in Michigan...

JERAS: I was going to be so disappointed in you.

O'BRIEN: ... went to the University of Michigan in Ann Arbor, and my friends, the Cobains, used to have incredible tailgating parties.

CALLAWAY: Yeah, yeah, right.

O'BRIEN: And -- you know, now that is -- now, that's football, big 10 football.

CALLAWAY: Yes?

O'BRIEN: Hundred and five thousand people.

JERAS: Big 10 doesn't exist any more. That -- oh, yeah, big 10 and big 12. It was the big eight that doesn't...

O'BRIEN: Whatever. But the, you know, 105,000 people there in the stadium, man! That's something. CALLAWAY: OK.

O'BRIEN: That's football.

CALLAWAY: All right, Miles.

JERAS: Well, you're a Michigan fan then?

O'BRIEN: Sure. Absolutely.

JERAS: We've got a little forecast for you.

O'BRIEN: Georgetown, you know, does great (UNINTELLIGIBLE).

O'BRIEN: Stop it. Stop it. I'm not going to go there.

CALLAWAY: All right, yeah, (UNINTELLIGIBLE).

JERAS: All right. Bunch of big games today, starting out with number 11-ranked Washington at Michigan, ranked 13th, just a little bit of the underdog there today, perhaps.

O'BRIEN: Yeah, I'm -- the Cobains are probably watching right now.

JERAS: Right.

O'BRIEN: Oh, maybe they don't have cable on their tailgating setup there.

CALLAWAY: I don't know.

O'BRIEN: Maybe they have the dish out.

CALLAWAY: Yes, they'd have to have the dish.

O'BRIEN: Yeah, yeah.
